Los chiles Chipotle son Jalape\u00f1os secos y ahumados. Estos son muy utilizados en la cocina mexicana como guarnici\u00f3n o condimento, a\u00f1adiendo un sabor picante y ahumado a cualquier plato.<\/strong><\/p>\n<\/div>

Introducci\u00f3n<\/strong>
Los chipotles son tan picantes como los t\u00edpicos pimientos jalape\u00f1os, que oscilan entre 2.500 y 8.000 unidades en la escala Scoville. Su sabor dulce y ahumado \u00fanico tiene tonos de chocolate y tabaco con un picor consistente, profundo y sutil
Los chipotles datan de los tiempos de los aztecas, que ahumaban pimientos como metodo de conservaci\u00f3n. El nombre viene de la palabra n\u00e1huatl ch\u012blpoctli que significa \u00abchile ahumado\u00bb.
Un chile chipotle es un jalape\u00f1o ahumado y seco. Los chiles jalape\u00f1os se mantienen en el arbusto tanto tiempo como sea posible y cuando tienen un color rojo intenso y han perdido gran parte de su humedad, se recogen y ah\u00faman durante d\u00edas con madera hasta que se secan, convirti\u00e9ndolos en chiles chipotles. Se necesitan alrededor de 10 kilos de jalape\u00f1os para obtener un kilo de pimientos chipotle.<\/p>\n

Como aplicarlo<\/strong>
Los chipotles tienen un sabor ahumado y le dan ese sabor picante a cualquier plato que cocine. Son buenos para mezclar con otras especias o sales, en sopas, salsas, carne y pescado, o puede rehidratarlos y procesarlos en un maravilloso adobo.<\/p>\n
