Introduction
Kampot Pepper is grown naturally following the essential principles of organic agriculture in soil building and conservation, pest management, and heritage-species preservation.
It is used whole, broken into 2 or 3 parts, crushed with mortar, ground in a grinder or grated with a nutmeg grater (grind or grate just before use).
Pepper is best purchased as whole peppercorns, as freshly ground pepper is vastly superior to the ready ground powder. Whole peppercorns retain their flavour indefinitely but quickly lose their aroma and heat after grinding.
